Uses of Aloe Vera in food

The rise of natural food, together with the food application of aloe vera gel, has led to the appearance on the market of a wide range of commercial presentations of pure aloe vera juice, or those that include a greater or lesser percentage of aloe vera gel in their ingredients.

Although they all advertise the benefits of aloe vera consumption, its true efficacy depends on the amount of active ingredients contained in the product.

Gel and juices

Consume Aloe Vera safely

The food industry uses two types of base material, aloe vera gel from the pulp, which has a minimal aloin content, and aloe vera juice, which is obtained from the whole leaf and includes pulp and latex (which contains aloin).

Both the AESAN (Spanish Food Safety Agency) as the European health authorities establish as a food safety measure that in order to use aloe vera as an ingredient or food supplement, it is necessary that the final product consumed does not exceed 1 part per million (1 mg per litre) of aloin, so as to avoid possible adverse effects.

Enrich your food

There are also commercial preparations in the form of jams or gel cubes in syrup, and presentations in the form of sweets which, due to their bactericidal and anti-inflammatory action, have a more therapeutic use.

Composition of aloe vera

At a nutritional level, the most notable components per 100 mg of aloe vera gel are:

5,13 gr lipids
7,26 gr of proteins
35,47 gr of fibre
26.81 grams carbohydrates
4,3 gr calcium

15,5 gr iron
3,41 gr potassium
0,22 gr sodium

Pure aloe vera juices

A food supplement based on pure aloe vera that incorporates vitamin C (ascorbic acid) and vitamin E as a stabiliser and is pasteurised to maintain its properties for up to 12 months.

Capsules

They contain aloe vera extract and are used in natural therapy to promote intestinal transit. They often incorporate other plant and probiotic active ingredients.

Yoghurts

They are available with pieces of aloe vera pulp or gel, but usually have a content of less than 10% depending on the brand name. Add to the benefits of the lactic acid bacteria in yoghurt the virtues of aloe vera.

Nature offers a free lunch, but only if we control our appetites.

Drinks with aloe vera

Aloe vera is included as an ingredient although it is not the main ingredient and it will depend on the product what percentage of pulp it contains and whether it is pure aloe vera gel or from aloe vera powder, in the process of which much of its properties may be lost.

From Alover we recommend always opting for presentations with the highest percentage of aloe vera gel from organic farming and whose processing is done in the shortest possible time, in order to enjoy all the benefits of its components.

When processing aloe vera, manual extraction of the bark ensures that the aloin content of the gel is kept to a minimum. This gel is the most suitable part for the production of food supplements. In whole-leaf products, the aloe vera undergoes a purification process called 'decolourisation', which removes up to 99% of the aloin.

Uses in the kitchen

The widespread knowledge of its benefits and innovation in modern cuisine with the inclusion of new techniques has made aloe vera one of the star ingredients of recent years. Dishes containing it can be found in renowned restaurants and numerous recipes can be found on cooking blogs.

Its main characteristic is that it does not modify the flavours of the primary ingredients and has a high capacity to stabilise emulsions without adding calories or fat content, which makes it possible to add texture to dishes, especially sauces and desserts.

What does aloe vera add to your diet?

The dietary benefits are directly related to its components:

  • Its high water and fibre content favours intestinal transit and has a satiating effect.
  • Its iron content, which is much higher than that of other foods, improves general fatigue.
  • Its low calorie level of 175 kcal/100 g helps to maintain body weight.
  • Its vitamin C increases the body's defences.
  • The presence of trace elements such as germanium, which is higher than in ginseng or ginger, stimulates lymphocyte production.
